Vanilla Coffee Cupcakes

Hello,

Today I thought I'd share a cupcake recipe which I love! I've adapted original recipe and you can do the same with this one if you wish. I hope you enjoy making these as much as I do!

 


-INGREDIENTS-

|MAKES 12|

CAKE MIXTURE:
  • 175g self- raising flour
  • 200g caster sugar 
  • 125ml sunflower oil
  • 1 medium free- range egg, beaten
  • 175ml milk
  • 1 1/2 teaspoon vanilla extract
 

ICING: 
  • 75g icing sugar
  • 25g cocoa powder 
  • 50g unsalted butter
  • 50g caster sugar
  • 2 tablespoons strong coffee
 

-METHOD-

1. Preheat oven to 190oC. 

2. Put the flour and caster sugar in a cake mixer and pulse a few times. Make sure everything is combined. 

3. Put the oil, egg, milk and the vanilla extract in am measuring jug and mix with a fork. Whilst the machine is running, pour in the liquid mixture. Scrape the sides to ensure that it is mixed fully. 

4.  Evenly pour the mixutre into cupcake cases and bake them for 18-20 minutes. (I usually check at 15).

 

 Leave to cool on a wire rack. 

 

5. Sift the icing sugar and cocoa powder together in a mixing bowl. Put the butter, caster sugar and coffee in a pan and put over a low heat. Stir gently until it is smooth, bring to boil and then pour it into the dry mixture. Mix together and leave for 10 minutes or when hardened. 

6. Spread the icing on top of the cupcake and decorate with sprinkles or a dusting of icing sugar.
